MiApple is being harvested this week and “unretained” Gala is not far away. Growers should be using iodine to monitor the development of sugars and decline in starch. This is the only accurate measure of developing maturity (apart from taste).
Sugar and pressure are both customer quality requirements not accurate maturity indicators.
